2 eggs
1/2 cup white sugar
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1 cup butter, melted
1/2 cup flour
1 (1 & 1/2 if you’re like me) cup semi sweet chocolate chips
9 inch pie crust (I wanted to use a graham cracker crust for this but was unable to find one, I used regular pie crust)
- prepare pie crust according to instructions (if applicable)
- preheat oven to 325F
- beat eggs until frothy, add sugars and vanilla
- melt butter, and add to sugar and egg mixture
- stir in flour until well blended
- mix in chocolate chips
- pour into pie pan and bake for 1 hour

*after about 5 mins in the oven
The chocolate chips will sink to the bottom causing a layering. To balance I added chips to the top of the pie about 15 minutes before it was done (about 45 minutes in). I used a toothpick down the center to test.

Sometimes we need to stay up late, be it to play video games or to work on the Minecraft server or whatever. So we drink lots and lots of coffee on the weekends. We get all of these at Wegs*.

Tiny little bit of ice in the glass
1/2 can illy caffe espresso
Caramel and chocolate to taste (I put a lot of caramel and a little chocolate in my coffee and Mine enjoys less caramel and ZERO chocolate…weirdo)
Stir
Add milk
Stir
Enjoy being up for the next 4 – 6 hours!!!

I have a habit of writing down recipes on scraps of paper and putting them in my Joy of Cooking book instead of saving the website, so naturally, I forget where I found this recipe, but it was years ago, somewhere on the internet. This is a really yummy twist on chicken tenders.
I normally cut this in half(ish) for just two people.
For the chicken:
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
3 large boneless/skinless chicken breasts cut into 2 inch pieces
2 eggs, slightly beaten
1 cup bread crumbs

Preheat oven to 400°F
Stir together paprika, sale and pepper – sprinkle over chicken
Dip chicken into egg then coat with bread crumbs
Place chicken on baking pan and bake 15 minutes
For the lemon sauce:
1/2 cup sugar (this is recommended by the recipe, even for me, it’s just too much sugar – I use a bit less than 1/4 cup for the half size recipe)
1/2 cup lemon juice
1 1/5 tsp curry powder

In saucepan over medium hear stir together lemon juice, curry powder and sugar
Stir until sugar is dissolved
Drizzle lemon sauce over chicken, return to oven and bake 5 more minutes

If you live in (or visited) New York, Pennsylvania, New Jersey, Virginia, Maryland, or Massachusetts you’ve probably seen a Wegmans grocery store. There was one recently built near us and it quickly became our favorite grocery store, beer store, bakery, late night coffee and snack run store (open 24 hours).
Today I just want to gush about their bakery. They make the most amazing everything. We weekly get fresh bread, bagels and less frequently we get their cookies, danishes, cupcakes and cakes.

*the BEST strawberry shortcake I’ve ever had, hands down

*this one is from a Wegmans in NJ, it was also amazing, and had double the frosting >_<
